INTERNATIONAL & INDIGENOUS GRAPE VARIETIES
The vineyards cover an area of 18 hectares at the foot of mount Sphigga (Sphinx).
International and charismatic indigenous grape varieties, such as Sauvignon Blanc, Merlot, Cabernet Franc and Malagousia, Assyrtiko, Mouchtaro coexist harmoniously.
Detailed farming techniques and proper canopy management ensure the quality of the grapes vintage after vintage.
The Tripio Lithari Vineyard (Pierced Rock)
Tripio Lithari is not widely known, even among locals.
It is a literally pierced rock in the area of Paliambelos (old vine) on Sfigga Mountain, which was carved over 200 years ago.
For many years the monks from the nearby monastery would harvest the grapes and use the rock to press them and channel the juice to their cellar.
Harvest is done by hand, during morning hours and the grapes are transferred promptly to the winery in 17kg bins by a refrigerated truck.
This secures that only the best grapes, with no bruising will reach the winery and at an appropriate temperature.
The freshness and the characteristics of the grapes are preserved.
