Maturation in Oak
An important step for several of our wines, is the maturation in barrels. Most of the reds and some whites are matured in French oak for up to 24 months, on the fine lees, with periodic stirring (sur lie and batonnage).
Parameters such as the length of the maturation, the cooper, the type of barrel, the wood, the toasting level, etc. are all taken into consideration, to allow each wine to better express its personality.
